I have been playing a few different cooperative style games lately and was thinking it might be kind of cool to have a cooperative game with AI for the creatures/enemy like Gears of War.
Thoughts?

It can be done. Several ways that come to mind.
1) The new D&D board games have each player activate a monster that's active on the board and must play them based on rules on the monster's card. These rules are usually a series of If-Then statements which describe a condition (i.e. nearest model, most powerful model, etc.) and what do against them (ranged attack, charge, special power etc.). So when a player is to activate one of their models, they must choose a monster first, play out that monsters orders then activate their own model.
2) The Reaction System with 2 Hour Wargames, uses a series of charts based on a monster's reactions. The monster activates on certain triggers (shot at, model moves within LOS, etc.) and dice are rolled with a series of logical statements that would dictate it's actions. Tables are different for each monster or race which then model their behavior.

Some simple mechanics like the AI moves towards closest gun shot, or friendly model in line of sight.
AI cards from Gears of War when a crit happens or something else- So, you roll a crit, draw an AI card and enemy models do something like charge, burst fire, double damage, etc.
